General tips for freezing the zucchini

Zucchini are so-called seasonal vegetables. This means that it is always available at a certain time of the year. In the case of zucchini, you'll find it in summer (that's why some of the vegetables are also called summer squash). In order to enjoy high quality, it is advisable to always buy organic zucchini from regional cultivation for freezing (as small and dark as possible) - and (only) during the summer season.

By the way, the word “zucchini” comes from Italian and is already the plural form, which in German-speaking countries is also used as a singular, although it actually means “zucchino”. We stick to the German “colloquial language”.

How to Freeze Your Zucchini Raw

A zucchini will keep the longest in the freezer if you don't cook the vegetables first, but freeze them raw. Here is our practical step-by-step guide:

  1. Wash the zucchini thoroughly under warm running water.
  2. Dry the vegetables carefully - for example with kitchen paper.
  3. Use a sharp kitchen knife to cut the zucchini into smaller pieces, such as cubes or slices.
  4. Now sprinkle the cut zucchini pieces with a little salt. This way you make sure that they stay nice and crisp when thawing later. The property of salt is to remove moisture from the zucchini (and other vegetables). This is a huge benefit when it comes to freezing zucchini.
  5. Wait a few minutes. During this time, water (due to the salt) forms under the vegetables.
  6. Pour off the “zucchini water” after about ten minutes - ideally in a container to use as a base for a delicious zucchini soup if necessary.
  7. Put the prepared zuccchini cubes or slices in a suitable glass vessel with the walls as thick as possible. Alternatively, you can use a plastic or aluminum container. Make sure, however, that the can is suitable for the freezer.
  8. Seal the container airtight.
  9. Put the container in the freezer.

Zucchini will keep for at least twelve months when frozen raw.

Tips

  • To protect the environment, you should avoid using plastic freezer bags.
  • If you don't want to freeze just one zucchini, you will need several containers. Our tip: Use a separate container for each zucchini so that the individual pieces have enough space in the freezer to unfold.
