In the case of ginger, the assignment to fruit is likely to come from processing it into candied ginger, which, like other candied fruits, tastes aromatic and sweet. In contrast, the use of young ginger sprouts as acetic acid gari, which is common in Japan, speaks in favor of a comprehensible classification as a vegetable.
