Freezing leftovers: raclette cheese

Freezing leftovers: raclette cheese

Freeze sliced raclette cheese

Any cheese left over from a raclette is usually cut into slices. Although the raclette cheese dries out faster in this form and loses its aroma, it is still possible to freeze it slice by slice and only thaw the required amount if necessary:

  1. Label a plastic or stainless steel freezer jar with the date it was frozen and the contents.
  2. Take the fresh and well-chilled raclette cheese and place between the individual slices of greaseproof paper. This prevents the cheese slices from sticking together and you can easily remove the required amount later.
  3. Put the raclette cheese in the freezer-safe container and close it carefully.
  4. Place the can in the *** freezer compartment at -18 ° C. Here the cheese stays fresh for about three months.

Freeze raclette cheese in one piece

If you have bought the spicy raclette cheese in one piece, it is ideal for freezing, as it stays fresh and aromatic for longer. Pack the piece of cheese in a labeled freezer bag or a box suitable for freezing and seal the container airtight. It can be kept for at least three months in the *** freezer. The longer the cheese is stored, the more it loses its aroma.

If you don't want to use the cheese for a raclette, but for gratinating, for example, you can simply rub the required amount of cheese from the frozen raclette cheese and put the rest back in the freezer.

Thaw the raclette cheese

Cheese should be given enough time to thaw: It is best to put it in the unopened freezer in the refrigerator the evening before. If it is not completely defrosted by the time you eat the raclette, that doesn't matter. The thawed raclette cheese will melt in the pan and taste like it is fresh from the cheese counter.

If something remains of the thawed raclette cheese, you should not refreeze it. There are no health risks to be feared, but the cheese will have little taste and a negatively changed consistency after thawing again.
