Recipe of the month: we love cherries

Cherry chutney

This aromatic chutney tastes great with goat or sheep cheese. We also find the combination with grilled food extremely tasty.

Ingredients:

  • 500 g cherries
  • 50 grams of brown sugar
  • 1 thumb-sized piece of ginger
  • 3 tbsp balsamic vinegar
  • 1 teaspoon cinnamon
  • black pepper from the mill

Preparation:

  • Wash and stone the cherries.
  • Pour into a saucepan, add sugar and bring to a boil.
  • Finely chop ginger and add.
  • Season to taste with vinegar, cinnamon and pepper.
  • Reduce until thick while stirring. The cherries should be crumbled and contain little liquid.
  • Stir continuously as the mixture burns easily.
  • Pour into clean jars, close and turn upside down until the chutney has cooled down.

Hearty cherry jam with rosemary

This is an unusual accompaniment to steaks or stews. This hearty jam also tastes delicious on fresh white bread.

Ingredients:

  • 500 g fully ripe sweet cherries
  • 250 g preserving sugar 2: 1
  • 2 - 3 sprigs of fresh rosemary, pluck the leaves off
  • ½ organic lemon
  • Balsamic bianco
  • Fleur de Sel (alternatively table salt)

preparation

  • Wash and stone the cherries
  • Pull the zest from the lemon peel and squeeze the fruit.
  • Put the cherries with the rosemary leaves, lemon zest and juice in the blender or the food processor with cooking function.
  • Puree everything until smooth.
  • If necessary, transfer the cherry puree to a saucepan.
  • Add the preserving sugar and mix in.
  • Bring to the boil and let it simmer for three minutes, stirring constantly or setting the machine to medium stirring.
  • Make a gel test. If the jam is still too runny, continue cooking.
  • Season with a little fleur de sel and balsamic vinegar.
  • Pour into clean glasses, close and turn upside down until the jam has cooled down.

Tips

Cherries are also great as a sweet dessert from the grill. Simply stick alternately with peach pieces on skewers, drizzle with a little honey and place briefly on aluminum foil on the grill.
