How to juice mirabelle plums in a simple way

What can mirabelle plums be used for?

Like their purple relatives, mirabelle plums are suitable for a wide range of uses in the kitchen: they taste just as good fresh from the tree as they are as compote, jelly, on cakes and in pies or as juice.

Their often small size can be both an advantage and a disadvantage when it comes to pitting: On the one hand, you have to peel a large number of mirabelle plums in order to obtain a substantial amount of pulp. On the other hand, the fruits are often small enough that they can be pitted with a cherry pitter.

How can mirabelle plums be juiced?

As with most fruits, there are several methods of juicing mirabelle plums. Most of them, however, have one major disadvantage: when cold juicing, for example with a juicer, a juicer or a berry press, the mirabelle plums have to be pitted beforehand. When hot juicing in a saucepan, it is also advantageous if the mirabelle plums no longer have a core.

Since pitting mirabelle plums is a very laborious job because the pulp is often difficult to remove from the stone, only one method of juicing is recommended for mirabelle plums: steam extraction.

Steam juicing mirabelle plums step by step

  1. Wash the mirabelle plums and carefully sort out any rotten or moldy fruits as these would spoil the juice.
  2. Place the prepared mirabelle plums in the fruit basket of the steam juicer. If you want, you can add a little sugar to sweeten the mirabelle juice.
  3. Now assemble the steam juicer: At the very bottom is the pot filled with water, above the juice container and above the filled fruit basket. Put the lid on top.
  4. Put the steam extractor on the stove for at least an hour. The hot steam destroys the cell structure of the mirabelle plums, causing the juice to escape and drip into the collecting container.
  5. Fill the finished juice into prepared containers using the pouring tube. If you use sterile bottles and close them immediately after filling, the mirabelle juice can be kept for several months without further boiling.

The self-made mirabelle juice is also suitable for making jelly from it or for making mirabelle liqueur.
