Prepare peas for freezing and freeze

When the round peas can be clearly seen and felt under the skin of the pod, it's time to pull them out and freeze them. This is done in four steps:

  1. Break open the pea pods and pulp out the peas.
  2. Put the peas in boiling salted water for two minutes.
  3. Soak the drained peas in ice water for a moment to pause the cooking process and keep the legumes green in color.
  4. The drained peas are now placed in a suitable freezer and then in the freezer. Freezer bags, cotton bags and lockable plastic or stainless steel boxes are equally suitable.

The frozen peas can be kept for about a year. The longer they are stored, the more vitamins and aroma they lose.

Freeze sugar snap peas

Snow peas are so tender that they can be eaten whole. They are harvested very young, so the sugar peas growing in them are still tiny.

You can freeze sugar snap peas as well as pith or pea peas. Before blanching, wash the pods and cut off the stem end with a sharp knife.

Thaw frozen peas

Depending on how they are used, you have various options for thawing the frozen peas. Since the peas are very small and the pods are very thin, thawing is done in a few minutes.

  • It's quick and easy if you put the peas in hot salted water and cook for about five minutes.
  • For pan-fried dishes, soups or, for example, risotto, you can add the frozen peas to the prepared dish a few minutes before the end of the cooking time.
  • Frozen peas can also be thawed in the microwave: Put them in a microwave-safe container and pour a splash of water over the peas. However, defrosting will take longer in the microwave than in the saucepan.
  • If you need the peas for a cold dish, you can defrost them gently by placing the freezer in the refrigerator overnight. The constant cooling prevents harmful germs from settling on the peas if they are to be consumed unheated.
