Prepare the boviste for freezing

Mushrooms, including the Boviste, are usually easy to store in the freezer. You can either freeze a ready-made mushroom dish or you can freeze the mushrooms unprocessed. Preparations for freezing take little time, but should be done carefully.

You should consider the following points:

  • Clean each Bovist individually and carefully remove all dirt with a brush or a dry kitchen towel.
  • Generously cut out any brown bruises or scuff marks.
  • Then cut the mushrooms into bite-sized pieces, such as cubes or slices.
  • Blanch the mushrooms before freezing.
  • Put the mushrooms in a freezer or a freezer bag and place them in the refrigerator compartment with the date label.

How are bovists blanched?

Mushrooms have a high water content and therefore lose their bite when frozen, they become soft and limp when thawed. So that Boviste or other mushrooms are still crisp and optically perfect after defrosting, you should briefly blanch them in the freezer before storing.

Blanching explained step by step

  1. Clean the boviste of dirt and unsightly pressure points
  2. Cut the mushrooms into the shape you want
  3. Prepare salted boiling water in a large saucepan
  4. Dip the mushrooms in boiling salted water for about a minute, preferably in a sieve insert
  5. Take the mushrooms out of the water and rinse them in ice-cold water

With this treatment, the Boviste remain crisp and retain their color. Before freezing, you can add oil and herbs such as parsley, chives, thyme or rosemary. This means that the mushrooms are already in a delicious marinade after thawing and can be processed immediately.
