How long do mushrooms keep?

Shelf life of fresh mushrooms

Fresh mushrooms can be kept in the refrigerator for a maximum of four days, outside of the refrigerator they usually go bad after just one day. In contrast, you can store cleaned and cut mushrooms for six to ten months in the freezer (not the freezer!) At 18 ° C. Dried mushrooms will last even longer, provided they are stored properly. Dried mushrooms belong in a dark, cool place and in an airtight container.

Store fresh mushrooms properly

If you only want to store fresh mushrooms in the refrigerator for a short time or outside of it, it is best to remove the plastic outer packaging from mushrooms from the supermarket. If the mushrooms remain in it, they go moldy very quickly and must then be disposed of. The mushrooms should also be cleaned and cut directly before processing, as this will keep them fresh longer. You should not remove even adhering soil and substrate residues when storing in the refrigerator. It is best to keep mushrooms in the refrigerator's vegetable compartment. If there is no space there, keep it in an airy, dark, and rather cool place.

Preserving fresh mushrooms

Fresh mushrooms can also be kept longer by freezing, drying, boiling or pickling. The advantage of preservation in this case is not only the longer shelf life, but also the intensification of the aroma - dried mushrooms in particular have a particularly strong mushroom aroma. Dried mushrooms must be soaked in cold water for about two hours before preparation. The soaking water, added to the dish, can provide additional flavor. Frozen mushrooms should not be thawed, but placed directly in hot fat or hot liquid.

Can I reheat already prepared mushrooms?

Basically, you can reheat previously prepared mushrooms. However, to prevent food poisoning, you should observe the following tips:

  • Do not leave mushroom dishes or their leftovers at room temperature for a long time.
  • Instead, cool them down as quickly as possible and store them in the refrigerator.
  • Freshly prepared mushroom dishes can be preserved by flash freezing.
  • Once reheated, mushrooms should not be frozen again or refrigerated and reheated.

You should especially be careful if you have added parsley to a mushroom dish: this quickly turns the dish sour and should therefore only be added when you are finally using it.

Tips

It is particularly useful to cultivate mushrooms yourself. Then you can cut exactly the amount of mushrooms you need right before preparation.
