Aloe vera is a succulent plant, which means that it has thickened leaves that hold water. Leaves growing in rosettes close to the ground are what make the plant so attractive:

The outer leaves of the aloe plant turn yellow, die, and make way for new ones. As long as the plant looks healthy and has new leaves in its center, there is nothing to worry about. In the younger plants, the yellowing may come from over watering. You should stop the watering for 1-2 weeks and continue to observe the plant. The discolored leaves can be cut off.
