Dry currants and keep them for a long time

Prepare currants to dry

Detach the fruit from the panicles and sort them carefully. If possible, the currants should not be washed, as the moisture lengthens the drying process.

Ways to dry currants

A dehydrator is best for drying red, white, and black currants. The temperatures are optimal and you do not use as much electricity. Refer to the manufacturer's instructions for temperatures and drying times.

The currants are placed on baking sheets in the oven and dried for several hours at a maximum temperature of 90 degrees. With circulating air, the drying process is completed sooner than with a normal oven with top and bottom heat.

Air drying

Spread the currants out on parchment paper, which you place on a permeable surface, for example a wire rack.

The berries are placed in a warm, airy and light place for several days. Currants shouldn't necessarily be dried in the sun, as the light will fade them. This also results in excessively high temperatures that destroy the fruit's ingredients.

Long shelf life if stored correctly

When the currants are completely dry, they are stored in screw-top jars made of stained glass. You can cover white glass with foil. Place the glasses in a dark, neither too humid nor too warm place.

Check from time to time that the berries are still okay. Sometimes mold forms because the fruit still contained residual moisture. Vermin also like to attack dried currants.

With proper storage, dried currants can be kept for several years. Add them dried to your tea mix. If you want to consume the berries in muesli or cake, soak them in water or milk beforehand.
