Freezing spring onions in three steps

Since spring onions can be frozen raw, there are just a few simple steps to a long-life frozen stock. The fresher the onions are frozen, the crunchier and tastier they will be even after thawing.

  1. Clean the fresh spring onions by cutting off the roots and any dead leaves. Peeling off the outermost skin is usually not necessary.
  2. Cut the spring onions into rings. You can use both the white part and the green leaves.
  3. Put the prepared spring onion rings raw in freezer bags or boxes suitable for freezer. Squeeze as much air as possible out of freezer bags before sealing. The containers are now firmly closed in the *** freezer compartment.

Depending on how it will be used later, it is also possible to freeze the white part of the spring onion separately from the green onion leaves. Don't forget to label the freezer containers with the date and contents of the freezer.

Thawing green onions

If you want to use the spring onions raw, for example in salads or dips, place them in the refrigerator in the sealed freezer. This means that the cold chain is not interrupted even when thawing and harmful germs have no chance of spreading on the vegetables. Since defrosting in this way takes a few hours, it is best to put the spring onions in the refrigerator the evening before.

For use in cooked dishes, add the frozen spring onion rings directly to the pot or pan. Briefly boiling or sweating them quickly thaws the spring onions and keeps their crunchy consistency. Thawing them beforehand would make them mushy.

Frozen spring onions can be kept for one year in the freezer at -18 ° C. The sooner you use them, the fresher and more aromatic the onions will taste.
