Currants cannot be kept for long

Do not keep currants for more than two days

Currants are best consumed immediately after harvest. If it does happen that you cannot use fresh currants until the next day, you have to store them in a cool place.

How to prepare currants for short-term storage:

  • Do not wash
  • Store with panicles in the refrigerator
  • Add sugar to the cleaned berries and place in the refrigerator

Washed fruits rot faster

Currants that you cannot eat immediately should not be washed or removed from the panicles.

Just collect any rotten or moldy berries.

Place the panicles next to each other on a plate and cover it with cling film. In this way, the berries stay fresh for a day in the refrigerator.

Sugar the currants

Sugar is a natural preservative. It prevents mold from growing. Sugared fruits keep for up to two days if they are well cooled.

Pick the fruits carefully, wash them and dry them with a little paper towel. Only then do you remove the berries from the panicles.

Put the individual berries in a bowl and mix them with sugar. Cover the bowl with cling film and put it in the refrigerator.

Take out of the refrigerator in good time

The currants lose their aroma as a result of the cooling. Take the panicles or sugared berries out of the refrigerator two to three hours before you eat them so that they reach room temperature and taste better.

Don't harvest too many berries at once

Chilled fruits no longer taste as good as freshly picked currants from the bush. Therefore, you should only harvest as many berries as you can eat or boil down on the same day.

Tips & Tricks

Currants will last longer if you freeze them. Frozen or canned berries keep for up to a year and can then be processed into compote or juiced. However, they lose some of their valuable ingredients through storage.
