How to store sweet potatoes for several weeks

Interesting facts about sweet potatoes

The sweet potato originally comes from Central America, so it loves warmth, but is otherwise undemanding. Established varieties also thrive in our latitudes, for example 'Beauregard' or 'Erato Orange'. They should be grown in a sunny location, preferably next to a heat-storing south wall.

The sweet potato is a staple food in many regions of the world. However, the sweet potato is not closely related to the common potato that is common in our country.

Save sweet potatoes

Sweet potatoes contain a little more water than ordinary potatoes, which is why they don't keep that long. But even if you keep them at home, you can achieve a storage period of several weeks.

You should not keep sweet potatoes in the refrigerator, as the temperatures there are too low for the heat-loving vegetables. A cool cellar room with a temperature of around 15 ° C is ideal for storing sweet potatoes. However, if you don't have a cellar, you can store the sweet potatoes at room temperature, which means that they will only keep a little less long.

Only store completely intact sweet potatoes, as injured tubers can quickly rot and the rot can spread to other sweet potatoes. To protect them from pressure points during storage and to meet their preference for dark storage, you can individually wrap the sweet potatoes in newspaper. The humidity in the storage room should not be too low so that they do not dry out. Check the stored sweet potatoes regularly for mold formation so that you can sort out the affected tubers immediately so that the mold does not spread to the others.

Freeze sweet potatoes

To keep sweet potatoes longer than the six weeks possible in the cellar, you can freeze them pre-cooked. You can do this as follows:

  1. Thoroughly clean the sweet potatoes.
  2. Cook them with the skin on.
  3. Let the sweet potatoes cool completely.
  4. Wrap the cooked tubers individually in aluminum foil.
  5. Put the sweet potatoes in freezer bags and place them in the *** freezer compartment, where they can be kept for a year.

Alternatively, you can freeze sweet potato puree. To do this, peel the cooked sweet potatoes, mash them and first fill the porridge in ice cube molds, then after a few hours in sealable containers. This allows you to portion the sweet potato puree individually later.
