Freeze muffins

In order to freeze muffins you do not have to pay attention to anything other than that they should be completely cooled down. Since paper muffin cases often stick to thawed or baked muffins, you should remove them before freezing or bake the muffins directly in a muffin tray without paper cases.

Place the muffins loosely in a freezer-safe container, i.e. a plastic or stainless steel box. Seal them carefully and label them with the contents and the date of freezing.

Frozen muffins will keep for at least three months and will be tasty.

Thaw muffins

To keep the muffins moist and fluffy after freezing, you have two options for thawing them:

Thaw in the refrigerator

Place the freezer with the muffins in the refrigerator, unopened. The muffins will take a few hours to thaw in this gentle way, but they will stay nice and juicy. In addition, they stay cool during the entire thawing process, which means that harmful microorganisms have no chance of multiplying on the muffins.

If you want, you can heat the defrosted muffins to make them taste like freshly baked. To do this, put them in the microwave for half a minute. Alternatively, they can be placed on the bread roll attachment of the toaster or in the oven for a few minutes at a low temperature.

Bake in the oven

You can put the frozen muffins in the oven for a short time to thaw or bake them. The oven temperature must not be too high, otherwise the muffins will be too crispy. 150 ° C is sufficient. After about a quarter of an hour, the muffins are warm and slightly crispy. You shouldn't leave them in the oven for longer, otherwise the muffins will dry out.

Alternatives to frozen muffins: cake in a glass

If you already know that you will not eat the muffins right away, there is an alternative: long-life muffins or cakes in a jar.

  1. Pour the prepared muffin batter into greased screw-top or swivel jars. The jars should not be more than two-thirds full, as the dough is still rising.
  2. Put the jars in the oven and bake the batter as instructed in the muffin recipe.
  3. Take the finished muffins in the jar out of the oven with oven gloves and close the jars while they are still hot. If the dough has risen too high, cut it off at the top of the glass with a clean knife.

Due to the sterile vacuum in the jar, cakes and muffins prepared in this way can be kept for four weeks without refrigeration. You can either spoon it out of the glass or overturn it if you have used suitable glasses.
