When winter is just around the corner, the rhubarb pulls in its leaves and stems by itself. Pruning is not required for wintering. You shouldn't touch a rhubarb plant with a knife anyway:
- Never cut back leaves and stalks
- take hold of the attachment with your fingers and twist it out
