Prepare the frilled mother hen properly
Before you prepare or preserve the Krause mother hen, however, there is still a lot of work waiting for you: a lot of dirt collects in the narrow ramifications of this mushroom, which cannot be removed with a brush or a damp cloth. For this reason, the Krause mother hen must always be washed so that you don't accidentally dry out and eat one or two beetles in addition to sand and pine needles.
- For the special aroma: dry the curly mother hen
- A difficult undertaking: properly cleaning the frilled mother hen
- Would you like to freeze or dry the dandelion?
Keeping the frilled mother hen - you have these options
In contrast to some other types of mushrooms, the frilled mother hen does not lose its taste through drying or freezing. Basically, it doesn't matter which type of preservation you choose: First and foremost, it depends on the planned further use, whether you want to freeze or dry the mushroom. Dried mushrooms have a more aromatic flavor, but freezing is the faster and more convenient method of preserving.
In the refrigerator
When cleaned and cut into small pieces, the curled mother hen will keep for about one to two days, provided you store it in the vegetable compartment of the refrigerator. Do not pack them in a plastic box or similar, but wrap them in a dry and clean kitchen towel (preferably made of cotton or linen). A finished dish can also be temporarily stored in the refrigerator for a day.
The bite-sized and cleaned pieces of the frilled mother hen should be blanched for a few minutes in boiling salted water before freezing. Then dry the pieces well and freeze them in a freezer at at least minus 18 ° C. Ready meals can also be frozen, but they can only be kept for a maximum of two to three months.
The Krause mother hen should be dried either in the oven or in a special dehydrator, but never in the air.
Do not use the Krause Glucke as part of a mixed mushroom dish and if possible only preserve it on its own: its intense aroma will whitewash all other tastes anyway.
