How do you prepare mangoes for freezing?

There are two recommended ways to freeze mangoes. Either cut the peeled and pitted mango into bite-sized pieces or puree the pulp and freeze the puree. Only use intensely fragrant, properly ripe mangoes for freezing.

So that you can thaw the pieces again individually or in portions, they must not touch each other during freezing, otherwise they will freeze together. You can prevent this by freezing the mango pieces loosely on a baking sheet and only placing them in a freezer bag when frozen. Or you can use a large, flat freezer container for this.

Be careful not to freeze the mango pieces or the puree for too long. The longer it is frozen, the more it loses taste. In addition, the valuable vitamins are also lost. After a while you should only use it in hot dishes.

How do you use frozen mangoes?

After defrosting, you can use the frozen mango puree just as you would use the fresh puree. The shorter the freezing time, the more suitable it is for raw processing. However, mango pieces get a little soft when thawed. Not everyone likes this in a fruit salad.

If you also want to defrost small amounts of puree, then freeze it in ice cube trays. Once it's frozen, you can transfer the cubes to freezer bags or cups. Don't forget to label them. Mango puree that is too old will lose its taste. Of course, this also applies to frozen mango pieces. After about three months should be used up.
